Pretty simple!
You may have missed the Save part to save your changes.
Assuming it is a standard format theme template:
From the Blogger Dashboard > Layout > Blog Posts > Edit
Post Page Options > Posted By > Off
Click the Save button at the bottom
Click Apply to Blog - top right
